INGREDIENTS
- Bread
- 10 cm piece of cucumber
- 2-3 teaspoons Aged jalapeno Hot Sauce
- a pinch of salt
- a pinch of sugar
- 100 g gravy whitefish
- 150 g sour cream
- 1/4 teaspoon salt
- a couple of drops of Smoke Hickory
- (chives or cilantro)
- Black pepper
First, make cucumbers pickled Aged jalapeno Hot Sauce. Dice the cucumber into small cubes and place in a bowl. Grind in salt and add a pinch of sugar. Add Aged jalapeno Hot Sauce and stir in. Leave to "marinate". Dice the whitefish into cubes and wait. Make smoked sour cream foam by beating sour cream into foam with an electric mixer. Add salt and a few drops of Smoke Hickory. Cut the bread into bites and place on a tray. First, put smoked sour cream foam on top of the bread pieces. Add the diced whitefish and jalapeno cucumbers. Grind some black pepper on top and garnish with chopped chives or coriander if desired.
